Five Ingredient Vegan Quinoa

Hey y'all!

Here's one of my favorite go-to dinners. I love it because it's inexpensive, easy, and quick.

All of the ingredients can be purchased from Trader Joes's. 



TIME: 10 minutes

INGREDIENTS
1 cup Organic White Quinoa
Coconut Oil Spray
1 Red Pepper
1 Cup Shredded Brussel Sprouts
1 Cup Organic Baby Spinach

*Optional: Sauce for extra flavor

RECIPE

  1. Pour 1 cup of Organic White Quinoa into a pot with 2 cups of water. Bring to a boil and then let simmer while moving to second step.
  2. Spray pan with Coconut Oil. Combine spinach, pepper, and brussel sprouts. Sauté the veggies until lightly browned.
  3. Combine cooked quinoa and grilled vegetables in the vegetable pan. Cover for a minute away from heat to allow flavor to spread.
  4. Pour into a bowl and enjoy! Recipe makes 2 servings.
