Here's one of my favorite go-to dinners. I love it because it's inexpensive, easy, and quick.
All of the ingredients can be purchased from Trader Joes's.
TIME: 10 minutes
INGREDIENTS
1 cup Organic White Quinoa
Coconut Oil Spray
1 Red Pepper
1 Cup Shredded Brussel Sprouts
1 Cup Organic Baby Spinach
*Optional: Sauce for extra flavor
RECIPE

1 cup Organic White Quinoa
Coconut Oil Spray

RECIPE
- Pour 1 cup of Organic White Quinoa into a pot with 2 cups of water. Bring to a boil and then let simmer while moving to second step.
- Spray pan with Coconut Oil. Combine spinach, pepper, and brussel sprouts. Sauté the veggies until lightly browned.
- Combine cooked quinoa and grilled vegetables in the vegetable pan. Cover for a minute away from heat to allow flavor to spread.
- Pour into a bowl and enjoy! Recipe makes 2 servings.
